Lines Of Research
Functional Foods:
Development of dehydrated, vegetable-based functional ingredients naturally enriched in bio-active compounds, such as selene amino acids, isothiocyanates, polyphenols, glucosinolates and sulforaphane. Among the objectives of this line of research is the optimization of blanching and drying processes, to maximize the content of bio-active compounds in the final product; formulation of functional foods (baked, extruded, dehydrated), stability studies of bioactive compounds during storage, microencapsulation processes.
Protein Purification Processes:
Design and optimization of processes to purify proteins or enzymes of interest to the food or pharmaceutical industry. Design of processes for the purification of metabolic bioindicator proteins (transthyretin), and enzymes of plant origin (myrosinase). Research in different protein purification operations in general, such as hydrophobic interaction chromatography and aqueous two-phase systems.
